Banana Bread

I had many requests for my apple oat cake recipe after womens circle. The girls loved it and said it’s the yummiest apple cake they’ve ever eaten! I love the texture of the grittiness of this cake from the whole raw oats, so I don’t blend or beat and simply stir.

Ingredients

2 cups oats

1 large grated apple

1/4 cup applesauce

1/4 cup honey

1/4 cup coconut yoghurt

2 eggs

2 tsp vanilla

2 tsp cinnamon 

2 tsp nutmeg

1/2 tsp baking soda

1 tsp baking powder 

I tblsp coconut oil

Method

Mix all wet ingredients then add dry and stir.

Pour into loaf tin.

Top with more spices, extra thin slices of apple optional & shredded coconut.

Cook for approx 30-40 mins until golden & skewer clean.
But don’t overcook as it’s a dense moist loaf. Let sit and cool before you cut, I learnt this the hard way as I was desperate for a piece and cut straight away and it crumbled ha ha.

You can serve with pure butter.
Maybe you might enjoy it golden and toasty and can brown each side in a sandwich press.
It’s delicious, moist, mouthwatering and healthy!
